About the size of tail from a 1/4 to 1/2 lb. lobster. You get all lobster tail meat, no shells. Your guaranteed to get 1 pound of tail meat for two people. Melt the 4 Tbsp of butter. In a bowl, combine the cracker crumbs, melted butter, lemon zest, and parsley. Mix until completely combined, set aside. Heat 1/2 cup butter in a saute pan over low heat. When the butter has melted, add garlic and slowly poach the garlic until soft, not brown. Add sherry and lemon—season with salt and pepper.
